Drop off for todays lunch catering job went great. I was so very happy with how tender and juicy the pork carnitas came out! Get this; I cooked it in a slow cooker. It was so easy. Trim excess fat from a 3lb pork shoulder and cut it into 2" chunks. Rub with chili powder, cumin, salt, and dried oregano. Then place in a slow cooker with 2 quartered onions and 5 garlic cloves. Then you just cover it and let it cook for about 6-7 hours on low. That's it! Remove the meat from the slow cooker, let it cool for about 2 minutes, then shred it. |

Avoid overeating. MEASURE YOUR FOOD! True, you may feel silly doing this, but it
really does work. Consider a bowl of
your favorite morning cereal. How do you
gauge how much to eat in the morning?
Most people just poor cereal blindly into a bowl and then drown it with
milk. However, that cereal comes with a
SERVING SIZE printed on the nutritional facts for a reason. If you just turn a blind eye to it you could
wind up blindly pouring enough cereral in one bowl for 2. |

This weekend I will be heading to Big Bear with some of my best girlfriend's for a little "Lady of Leisure" time. We will be hiking, drinking wine by the fire, relaxing on the deck surrounded by nature, pruning ourselves in the hot tub, and of course we will be eating! I wanted to make you all jealous and share with you the menu that I have created for the weekend.

Sometime at the
end of July or beginning of August, I can’t remember which; I applied for a
position catering weekly lunches to an office in Santa Monica. When I saw their post on Craigslist I just
had this gut feeling that it was going to happen. It sounded so right. They needed a caterer who could bring in food
once a week or every other week, and they also wanted someone who was
affordable, healthy, and offered a wide variety. I replied to their post and sent them a cover
letter along with my resume. |

This dish I made this morning reminds me of a much heavier family version that my Nonnie makes every holiday. I loved her egg and sausgae casserole on Christmas mornings with a nice glass of OJ and a cup of tea. My version cuts down on the fat and cholesterol by cutting down on the egg yolks, using veggie bacon instead of pork sausage, and replacing the heavy cream with 1% milk and fat-free cottage cheese.

This past Saturday, August 13
2011, was a BIG one for Lulu Bites! I
had already booked a job for that evening.
I was going to be catering a screening party at the R Lounge in Studio
City from 6-9pm. When I first was hired
to cater the party the woman who hired me, an incredibly sweet and positive
person, said that she wasn’t sure how many people it would be for. She was guessing around sixty, but we had
agreed that she would confirm a more solid number with me forty-eight hours
before the event. |

People often complain about not having enough time to excersice. Life can get hectic, that is a fact we can all appreciate! However, there are simple ways to help keep your body active while living your busy lifestyle day-to-day. Walking is a great way to help keep your body active. A person is capable of easily walking almost 10,000 steps a day and that equals about the distance of 5 MILES!! However, the sad but true fact is that most people only tend to take about 1,000-3,000 steps a day. That's a bit of a drastic difference, isn't it? But there are easy ways to add more steps into your daily life. Take the further spot in the parking lot instead of seeking out the one closest to the entrance of the store you are running into. Always take the stairs! Life hands you brief workout on a stairmaster that actually gets you somewhere all the time! You should take that opportunity to tone your glutes and your calf muscles! If you find yourself on an escalator, keep walking! Don't just sit back and enjoy the ride! If you have an errand to run that is in walking distance . . . walk there! Sure it may add a few more minutes to the errand time, but it is also adding years to your life and taking inches off your waist line! Be active, friends! Happy eating and healthy living!

As some of you may already know,
the event that I catered on Saturday the 30th was a surprise party
for an amazing girl named Eleanor. I
went to college with Eleanor’s boyfriend, Holt.
(The awesomeness of who they are as individuals and as a couple is
apparent in their names alone: Holt and Eleanor! “Loves it!”)
He had called me at the beginning of the month to see if I would be
interested in catering the surprise party he was throwing for Eleanor or if I had
any caterers I would want to suggest that I knew were good. |

Just finished dropping off my last meal for the movie job. Tonight the cast and crew are dining on Whole Wheat Spaghetti Bolognese. I even made my special vegetarian bolognese for the one vegetarian on the set. My hands are so cracked and dry from washing so many dishes, but it was worth it!! I made a little extra of the sauce for my hubby. He took one bite of it and his eyes lit up and he said, "DAMN!" It wa sa great note to end a job on! Now to celebrate we are going to see Captain America in 3D. |
